This alkalizing soup is wonderful for a detox, to boost your energy, lose weight, or just to get some extra veggies in your diet. I make it a few times a year now, but I love it in January as a reset after the holidays. At least it makes me feel like I'm being healthy!
The recipe was given to me by a friend, who was given it by someone else. I'm not sure of the original creator; if anyone knows, please tell me so I can give credit.
I adapt the recipe and make it with what I have each time. You can adjust it to your liking.
Green Detox Soup
Cayenne Pepper (if desired.)
I use about equal parts of each. It was one package/bunch of each item and 2 of each squash. Whatever you have on hand is totally fine.
Dice and steam the green beans, zucchini, yellow squash and celery. Cook until veggies are tender.
Remove from heat and blend (I use my blender) with spinach, cilantro and parsley and dash of cayenne until creamy/smooth texture. You can add more filtered water while blending if needed. A thick soup-like texture is great.
Serve warm or cold (I prefer warm) and you can drizzle a bit of nut or olive oil on top if you like.
